Drink This With That: Cuban

In last month’s installment of Drink This with That, I spoke about how little authentic Japanese food there was when I grew up in South Florida. But Cuban food? Now we’re talking. Miami was and still is the epicenter for Cuban fare in United States. 

I became familiar with a plethora of Cuban delights in Miami on Calle Ocho in the Little Hanana neighborhood. Calle Ocho, Eighth Street, bustled with Cuban culture where nary a word of English was spoken on a street lined with restaurants, cafés, ventanitas (walk-up windows that serve potent Cuban coffee), and cigar shops. The area was lively at all hours with older gentlemen in guayaberas playing dominoes in the morning and smartly attired couples arriving for dinner at Versailles, known as the World’s Most Famous Cuban Restaurant, which opened in 1971.

From the ubiquitous Cuban sandwich to creamy rich flan – Cuban food offers a wide range of wine pairing opportunities, from bright, citrus-driven dishes to deeply savory, slow-cooked preparations. 

Cuban Sandwich

The Cuban sandwich layers slow-roasted pork, sliced ham, Swiss cheese, tangy pickles, and sharp yellow mustard upon a pillow of soft bread before being pressed until the exterior is crisp and golden. It’s salty, savory, tangy, and slightly creamy all at once.

Ceviche

Ropa Vieja

Lechón Asado

Lechón asado is one of the most iconic examples of Cuban cooking. Pork is marinated in a mixture of garlic, oregano, and sour orange juice, then slow roasted until tender. The dish balances richness with brightness, with the marinade cutting through the natural fattiness of the pork.

Drink This With That: Sicilian Cusine

Welcome back to Drink This with That—featuring what to drink with specific foods and international cuisines. This month we explore wine pairing options for Sicilian cuisine. Sunny Sicily is a bountiful island off the toe of the Italian “boot” with cuisine that is layered with flavor drawing influence from the many cultures that have shaped its culinary traditions including Greek, Arab, Norman, and Spanish. From Caponata to Cannoli, Pasta con Sarde and Pasta La Norma, to the ubiquitous Arancini. These are the foods I grew up with that hold a special place in my heart and on my palate.

Caponata

Caponata is a quintessential Sicilian antipasto dish that traces back to Arab rule in Sicily when the introduction of eggplants and the concept of sweet and sour flavors (agrodolce) influenced local cuisine. The dish combines eggplant, tomatoes, celery, olives, capers, and vinegar, creating a complex interplay of flavors. Eggplant is a staple of Sicilian cuisine and caponata is the one dish that immediately soothes and calms me. I used to make jars of it with my Italian Nonna (grandmother) to take back to school to share with my roommates, but invariably I would end up eating the entire jar myself. Oops!

Pasta alla Norma

This dish is a tribute to Vincenzo Bellini’s opera “Norma,” composed in Catania. Pasta alla Norma features pasta topped with a rich tomato sauce, fried eggplant, and salted ricotta cheese, reflecting the abundance of local ingredients and the influence of Arab culinary traditions.

Arancini

Arancini are deep-fried rice balls filled with ragù, peas, and mozzarella. The name “arancini” means “little oranges,” referring to their shape and golden color. Today, they are ubiquitous street food, with regional variations. Arancini were the afterschool treat of my childhood. On my first trip to Sicily, I swooned upon sight of a shop dedicated to Arancini. It was like the Baskin Robbins of Arancini with a multitude of flavors and filings to choose from. I was in rice ball heaven.

Grilled Swordfish (Pesce Spada alla Griglia)

Swordfish has been a staple in Sicilian coastal cuisine for centuries, particularly in the Strait of Messina. Grilled swordfish, seasoned simply with olive oil, lemon, and herbs, showcases the simplicity and freshness of Mediterranean seafood.

Drink This With That: Vietnamese Cuisine

 

Welcome back to Drink This with That—This month we explore wine pairing options for the vibrant world of Vietnamese cuisine.

The iconic dishes of Vietnamese cuisine offer a literal garden of delights with a harmonious blend of fresh herbs, spices, with flavors ranging from spicy and sweet to sour, and savory umami notes.

Vietnamese Cuisine is lighter and more subtle utilizing herbs and light broths versus Thai cuisine, which is bolder, spicier and more intense. Characteristic ingredients include lemongrass, ginger, mint, coriander, Saigon cinnamon, bird’s eye chili, lime, and Thai basil leaves. Many dishes are low in sugar and dairy and primarily rice based using rice flour and rice-based noodles rather than what based, making them naturally gluten free.

Drink This With That: Dumplings

Welcome back to Drink This with That—a new feature about what to drink with specific foods and international cuisines. Each month we will highlight a particular food or dish with pairing options and a link to the Wine Road searchable database to find the wines we recommend from the tried and true, to the options that add a bit of a twist to the standard pairing.

This month we explore wine pairing options for the many varieties of Dumplings.

Dumplings as we know them today came west from China across Mongolia, Russia and Georgia. And supposedly Marco Polo brought them to us, who most likely came across them when he traveled extensively along the Silk Road during the Mongol Empire.

From Georgian Khinkali to Japanese Gyoza— just about every culture has a dumpling featuring a specific wrapper, filling and cooking method. Be it potstickers, kreplach, pierogi’s, even ravioli; the dumpling has a range of flavors and textures that allow for wonderful wine pairings.

Pairing tips: Fillings matter, aim to match wine flavors to dumpling fillings. Look for contrast with texture, balance tender dumplings with crisp wines. Also consider traditional pairings from the specific dumpling place of origin, I’ve added a few that are classic. (And when in doubt, choose Sparkling wine—it goes with everything.)

Tacos, a flavorful and versatile Mexican dish, can be elevated with thoughtful wine pairings. Tacos are not just a reason for celebrating Tuesday, they are a many splendored thing. Spicy, deep, earthy and savory—and just like wine, there are many aspects of the famed taco to explore and enjoy and pair accordingly.

On the palate it’s soft as cotton candy, yet bold with spicy flavors of strawberry, ripe raspberry, cherry and pomegranate. Nice structure overall with a long spicy finish. Pair with Ginger Lime Panna Cotta.

On the nose, scents of watermelon and pink peppercorn. On the palate, a medley of juicy mango, blackberries, raspberry, strawberry and grounding note of clove on the long bright finish. The Quivira Vineyards 2023 Wine Creek Ranch Rosé from Dry Creek Valley is a

blend of 53% Grenache, 22% Petit Sirah, 14% Counoise, 7% Mourvedre, and 4% Primitivo. It has a soft pale pink color with a rosy gold rim like a sunrise. On the nose, it’s a summery confection of strawberry, watermelon, cherry and bubble gum.  On the palate, steely acidity with flavors of raspberry, strawberry, candied ginger and thyme. On the finish, a soft creaminess emerges with a distinct note of passion fruit. Pair with French radishes with herb butter and salt for dipping.

On the palate it sings with flavors of lime, hibiscus, tomato leaf, ginger and a note of creamy passion fruit on the long fine finish. Pair with Mozzarella, Tomato, and Basil salad.

Robert Young Rachel’s Rosé 2022, Alexander Valley

 

The Robert Young Rachael’s Rosé 2022 Alexander Valley, is the first wine made by Rachael Taylor, a 6th generation scion of the Young Family, in honor of her great-great-great-grandmother Rachael Young. The color is a soft ginger pink with a gold tinge at the rim. On the nose, rose petals, strawberry, parchment, dried thyme and lavender linen. The palate is taut and tart with notes of sweet strawberry, orange marmalade, limeade, and rhubarb. Pair with grilled summer squash with a tomato-goat cheese pesto.

Varietal of the Month: Grenache


 

Grenache is a wonderful and versatile varietal all on it’s own, but its claim to fame is its use as one of the fundamental grapes in the highly regarded French Rhone blend Châteauneuf-du-Pape. Grenache is a medium bodied red wine with moderate acidity, and bright red fruit and strawberry flavors. The tannin structure can range from light and smooth to more pronounced depending on the climate in which it is grown.

Amista 2022 Grenache, Morningsong Vineyard, Dry Creek Valley

 

The Amista 2022 Grenache, Morningsong Vineyard, Dry Creek Valley is a harbinger of Spring with a fresh floral nose composed of plum blossom, red raspberry, a hint of clove, juniper and strawberry. On the palate, notes both sweet and savory come forward with hibiscus flower, dried strawberry, juniper and a flavor sensation like that of a fine confectionary made of dusty rose petals and fine pea gravel. That may sound weird, but trust me—it’s delicious—delicate and balanced. It has great structure with soft acidity and medium tannins on a long fine spicy finish. Pair with Croque Monsieur sandwich, a melted marvel composed of French ham and Gruyère cheese.

Capo Creek 2021 Estate Grenache, Dry Creek Valley

 

The Capo Creek 2021 Estate Grenache, Dry Creek Valley opens with a nose of dried rose petals and the bright scent of red cherry, strawberry compote, plum, clove and violets. It also has a luxe scent like that of a fine bag made of pebbled Nappa leather— deep and earthy. On the palate, a soft acidity with herbal notes of rosemary and thyme mingle with flavors of sweet plum, warm fig newton and a touch of strawberry. Medium tannins and a spicy finish make this a sure thing for pairing with a hearty Moroccan stew.

If Willy Wonka made wine it would probably be as whimsical and magical as The Meeker Vineyard 2022 Grenache. On the palate, blackcherry, dried strawberry, spun sugar, fig and a tangy herbal note of sour red cherry and thyme. Great texture with medium acidity, soft tannins and a zesty, piquant finish. Pair with something sweet and savory like a Summer berry pie or poached pears. And for the record—I’m team Gene Wilder all the way, Depp and Chalamet have their moments but nothing beats the OG Willy Wonka of 1971.

The Moshin Vineyards 2021 Grenache, Scotts Creek Vineyard, Russian River Valley is like a cheerful song you can’t stop humming. It has a lyrical nose of rose petals, plum, strawberry, black cherry, sunshine and sage. On the palate a big bang of rich flavors with red plum, pomegranate, raspberry and clove. The light tannins and juicy acidity bring forward notes of leather and crushed gravel with a warm peppery finish. It’s smooth and soft like the lyrics to Soft Kitty! (Soft Kitty, Warm Kitty, little ball of fur, Happy Kitty, Sleepy Kitty, Purr purr purr...) If Sheldon drank wine he’d pair this with mee krob and chicken satay with extra peanut sauce.

The CAST 2022 Riesling from Sonoma Coast has a light white floral nose of honeysuckle and jasmine. On the palate it leads with bright citrus notes of Meyer lemon and pink grapefruit. Secondary notes of apricot and ginger meld with a zesty hit of orange peel that boosts the acidity. The finish is long with soft notes of chalk, beeswax and limestone. Bright and focused it’s the first Riesling vintage from CAST and one to be savored. Enjoy with spicy Shrimp Pad Thai.

As I tasted the Dutcher Crossing 2021 Riesling from Russian River Valley, I was struck by its magical qualities. Well, not really magical, more like irresistible. So charming and enchanting a Riesling, I fell under its spell. On the nose, aromas of honeysuckle, beeswax and jasmine, with a slight hint of petrol, a characteristic note in Riesling. On the palate, flavors both tart and sweet—a crisp tropical explosion of juicy pineapple, guava, mango, green apple and candied ginger. The long finish is tart with a wonderful creamy coconut note. Pair this magical elixir with slow-roasted pork smothered in a spicy chili crisp-apricot-pomegranate glaze.

The Furthermore Wines 2021 Riesling has all the earmarks of a classic. The Harvest Moon 2021 Sparkling Gewurztraminer from Russian River Valley is a focused confluence of flavor and body. First of all how often do you find a Sparkling Gewurztraminer? Not that often and when it’s made like this one, best grab a bottle or two. On the nose warm scents of brioche, marzipan, rose petals and spicy ginger. On the palate, it walks a tightrope between creamy and steely body weight with delicious flavors of lychee, grapefruit, quince and orange peel. You’ll find a fine bubble stream and great balance in this lean but luscious sparkler. I had one glass, and before I could have another my husband had finished the bottle. Pair with someone who knows how to share!

The Russian River Vineyards 2022 Gewurztraminer from Sonoma Valley smells like a tropical rain with soft aromatics of peach, lychee, spicy carnation, Turkish delight (rose water) and honeysuckle. On the palate it exhibits great texture with bracing acidity and lush flavors of ripe peach, grapefruit, ginger, lychee and coconut. On the finish, a lingering note of juniper and lime with a hint of bergamot. It’s juicy yet steely; a fine balance of sweet and tart. Pair with spring rolls and Hoisin dipping sauce.

Varietal of the Month: Viognier


 

Viognier, originally from the Northern Rhone Valley in France, is a full-bodied white wine with a rich, unctuous texture. Intensely aromatic, Viognier has good acidity, tannin structure, and relatively high alcohol. Viognier from cool climates tend towards bright citrus notes, while warm climate wines exhibit deeper floral notes and ripe stone fruit flavors. Pronounced [Vee-ohn-yay]

Varietal of the Month: Barbera



Barbera: Prince of Darkness, Goddess of Light—well not exactly, but Barbera is characteristically dark in color and light in taste. It’s a fairy tale of red and black berry flavors with high acidity, relatively low tannins, and a spicy finish. A charming and quaffable Italian varietal, Barbera pairs well with braised meats and roasted vegetable dishes.

Colagrossi 2019 Barbera Moon Mountain, Sonoma County

 

The Colagrossi 2019 Barbera from Moon Mountain in Sonoma County has all the earmarks of a classic. Dark ruby color with a magnificent nose of mocha, rose petals, anise, and blackberry. On the palate, a plush mouthfeel with blackberry, dark cherry, fig, plum and sweet tobacco. Fresh acidity and textbook Barbera structure carry the dark fruit flavors smoothly forward with a spicy pepper and clove spiked finish. From first sniff to last sip it’s a pleasure. Enjoy with pumpkin sage ravioli.

The Carol Shelton 2022 Barbera D’ Oakley hails from the 130-year-old Planchon Vineyard in Contra Costa County, co-planted with Zinfandel and Merlot. In the glass it’s medium garnet in color. On the nose a light scent of violets, blackberry, vanilla and touch of earthy nutmeg. On the palate, a tangy juicy punch of flavor full of pomegranate and black cherry with a grounding notes of thyme and peppercorn. The blend of Zinfandel and Merlot give this Barbera a fine balance with a bright yet plush mouthfeel and notes of Santa Rosa along with black pepper and blackberry on the long spicy finish. Pair with cheesy sausage and pepper pizza.

Wild Woodland creature indeed! Right on the label the Peterson Winery 2019 Barbera from Tollini Vineyard declares the wine possesses the spirit of a “wild woodland creature”—indeed the simile is apt. With it’s dark color and bright flavor it’s a wily but approachable Barbera. On the nose, deep earthy notes of garrigue, licorice, ripe blackberry, and mocha. On the palate, notes of tangy tart cherry with a medley of thyme, marjoram, and blackberry brambles. A plush mouth feel with soft tannins that deliver secondary flavors of fig and plum, boysenberry and slate. Balanced and beautiful. Pair with Rabbit Ragu over Pappardelle.

Varietal of the Month: Zinfandel


You can’t come to Sonoma and not taste Zinfandel. Well, you could but why would you? Especially since the area is one of the premier Zinfandel growing regions where the grape has been grown since the 1800’s. Zinfandel is a medium-bodied dry red wine with a range of dark fruit flavors that include raspberry, blueberry, red and black cherry, and plum. Notes of tobacco, brambles, and spice are common as well. Medium tannins make Zinfandel a versatile food pairing wine for a wide range of dishes from pizza to barbecue.

Acorn Heritage Vines 2019 Zinfandel, Alegría Vineyards, Russian River Valley


The Acorn Heritage Vines 2019 Zinfandel from the Russian River Valley is a field blend of 78% Zinfandel along with 11% Alicante Bouschet and 9% Petite Sirah. I implore you to get a bottle and see the 16 other varieties that make up the remaining 2% —it’s astounding and it’s also what makes Acorn field blends so enigmatic and pleasurable.  On the nose, notes of mocha, blackberry tea, Santa Rosa plum and garrigue—which are herbaceous shrubs found in the Mediterranean. On the palate, multiple layers of flavor come into play. Soft medium tannins support notes of salty licorice, blackberry and plum that offer both juiciness and depth with a bright spicy finish.

On the nose, bright strawberry, all-spice, black cherry, blueberry and a seductive meaty note that was thoroughly enticing. On the palate a harmonic convergence of peach preserves, strawberry and an herbal sage note that gives it depth and continuity. It’s buoyant, balanced and complex with hints of white pepper and dark chocolate on the long fine finish.

Dutcher Crossing 2019 Zinfandel Bacigalupi Vineyard 

 

The 2019 Dutcher Crossing Zinfandel from Bacigalupi Vineyard, is bursting with the vitality and verve that I’ve come to associate with Bacigalupi fruit. Upon opening, the nose has faint earthy notes of sweet briar and brambles along with dusty gravel and saddle leather. As it evolves in the glass, scents of strawberry waft up along with a warm tendril of vanilla and mocha. On the palate, a plush body with flavors of black cherry, blueberry and blackberry and a hint of clove. The soft tannins deliver a spicy finish with grounding notes of dark plum and soft sage. It’s sleek and smooth and savory.

The Ehret 2021 Zinfandel form Knights Valley is a beguiling beauty. On the nose, a clean scent of fresh picked strawberry, and a delightful mix of vanilla, butterscotch, peach and fleshy bing cherry. On the palate there’s a savory meaty note along with rich voluptuous flavors of blueberry and boysenberry. The long soft finish has hints of licorice and sage. J. Rickards Winery 2019 Old Vine Zinfandel, 1908 Brignole Vineyard, Alexander Valley

 

Three cheers for field-blends and old vines! The J. Rickards Winery 2019 Old Vine Zinfandel from the 1908 Brignole Vineyard in Alexander Valley is another great example of how even tiny quantities of a varietal can add to the overall shape, tone and texture of a wine. Add to the mix the immeasurable value of gnarly old vines, and you have all the makings of a mythic wine. The grapes in the blend are 80% Zinfandel, 10% Petite Sirah, 5% Carignane, 4% Mataro and a 1% Alicante Boushet, Muscat Canelli and Golden Chasselas. On the nose, notes of strawberry, red cherry, blueberry and spicy carnation. Full bodied with flavors of red and black currant, and secondary notes of mocha and vanilla. The spicy finish rings long and clear to the end with notes of strawberry and rhubarb.

On the nose, scents of chocolate covered blueberries and raspberries with a spot of black licorice and black pepper. On the palate it’s opulent and sultry with notes of blueberry, butterscotch, and spiced peaches. The vibrant finish sallies forward with of notes of tart cherry, sage and blackberry. It’s a meaty meal of a wine that would pair beautifully with a roasted leg of lamb.

Limerick Lane 2021 Zinfandel Russian River Valley

 

The Limerick Lane 2021 Zinfandel from Russian River Valley is both feisty and profound. And you gotta love a wine that quotes Aristotle right on the label — “In all things of nature there is something of the marvelous.” This wine is marvelous indeed, with a perfumed nose of hibiscus, blackberry, cedar incense, sweet tobacco, boysenberry and wet gravel. Notes of chalk and dusty cocoa are present as well. On the palate, punchy flavors of tart cranberry, thyme, blackberry, and red plum. Fine balance of acid and tannin bring a fruity freshness and vitality to this varietal with a minty snap of spice on the long lingering finish.

The Tadddei Wines 2021 Zinfandel from the Ioonnatti Vineyard in Dry Creek Valley is a wine of grace and structure. Woodenhead 2019 Zinfandel 1925/1939 Old Vine, Alexander Valley 

 

The Woodenhead 2019 Zinfandel, from Alexander Valley is another fine example of a dazzling field-blend with great depth and nuance. The wine is one-of-a-kind, the product of a confluence of circumstances that led the winemaker to acquire the old vine grapes before the vineyard was sold to a new owner. On the nose, ripe boysenberry and black plum with a touch of sweet briar, sage and rooibos tea. The palate is full with flavors of just picked strawberry, blueberry, rhubarb and grounding notes of mocha and nutmeg. The long taut finish recalls the herbal qualities first detected on the nose and rounds out with a gingery note of cardamom. Unfined and unfiltered it’s an honest expression of the varietal with no pretense. The “just right” tannins leave you thirsting for the next sip.

Are you ready to Think Pink? It’s time to roll out the Rosé and slip into the warm embrace of summertime. Although Rosé has become a year-round choice—it shines brightest in the summer. Light and lively, with flavors of strawberry, watermelon and spice—Rosé is the crisp and refreshing choice for your table as well as the picnics and barbecues that make the season special. Depending on the varietal it’s made from, the color can range from deep salmon to a translucent onionskin to barely there pale pink.

On the palate, brilliant acidity with juicy notes of grapefruit, citrus zest, and crabapple, in balance with grounding notes of black olive and cayenne.
